Simplicity Food & Snacks

Boat life can be simple. Food, snacks are homemade, organic, and healthy.   I love it when we are in regions where we have loads of fresh fruit and vegetable.  Here are some of my favorite snacks, sometimes turning into a meal depending on the passage.  

 

  1. Crackers and Dip

  2. Pre-Cut Veggies and Dip

  3. Pre-Cut Cheese and Meats

  4. Pre-Cut Fruit

  5. Pre-Made Salads

a.      Mixed green salads with Italian meats and light cheese

    1. Pasta Salad – with vegetables and meats

    2. Chicken Salad

  1. Jerky

  2. Granola /Granola snacks

  3. Deviled Eggs

  4. Hard Boiled Eggs

  5. Hummus & Chips

  6. Fresh Grapes

  7. Mini BabyBel Cheese

  8. Antipasto – olives, pepperoncini, cheese and Italian meats

  9. Homemade Muffins

Sandwiches - I like to get fresh rolls, keep my lettuce, onions, tomato, separate and ready to put on the rolls, mustard and mayo. Again, keep the meats and cheese separate.  When its time for lunch, I either build the sandwiches or let my guests build their own. 

Pre-make a Chicken Salad, have the lettuce ready to put on a plate, and then place the chicken salad on the bed of lettuce.  Add a few crackers, easy and simple.

Simple Breakfast ohhh, so easy…..

Artichoke, Feta, Sun-dried tomato Quiche                                                                                        

1 Pie crust pre-made

6 Eggs

Drain the Marinated artichokes

Crumble one 6oz – 8 oz. package of Feta

½ package of Sun-dried tomatoes chopped

4 Green Onions chopped

¼ C milk

Whisk together and pour into pre-made pie crust.  Bake in an oven at 350 degrees for 30 minutes.  Test by putting your knife into the quiche, if it comes out clean it is done.

 

 

I love making homemade Granola on the boat. Thank you Missy Costello for my Karma Chow Cookbook that is my go to on the boat!

3 cups organic gluten free oats

1 cup oat flour

½ cup organic cranberries or cran-raisins                                               

½ cup sliced almonds,

½ cup hemp seeds

¾ cup organic coconut oil, if solid, microwave for 10 to 15 seconds

¾ cup organic Grade B Maple Syrup

1 teaspoon organic vanilla extract

1 teaspoon cardamon

1 teaspoon cinnamon

½ to 1 teaspoon salt

Instructions:

In a large bowl, mix oats, flour, cranberries, almonds, hemp seeds, and all dry ingredients.  Then mix together the Maple Syrup, Coconut Oil and Vanilla.  Mix with dry ingredients.

Prepare your cookie sheet with by lining it with parchment paper,  then take your ingredients and put onto the cookie sheet and even out.

Place in a pre-heated oven at 350 degrees.  Cook for 20 minutes and then move the oat mixture around on the cookie sheet as to not over brown the bottom layer, cook 10 minutes.

I use plain Fage Total 0% Greek Yogurt.  Add about ½ cup yogurt, then sprinkle your granola mixture add fruit, and a bit of honey.
